Big-box meat shows up on a truck, shrink-wrapped days earlier. We don't curate someone else's meat — we cut our own, by hand, at our Bemidji counter the day you order it. You can see the difference in the marbling. You taste it in the first bite.

We grade for the top end, source from named Midwest farms, and cut it the way you want it — thick, thin, trimmed or tied. Steaks, roasts, chops, fresh ground beef, chicken, and our house-smoked salmon. All from the same case.
