Why Bemidji Hunters Bring Their Deer Here
Your deer, your meat, your name on the package.
Most processors run batch processing during deer season — multiple hunters’ deer get mixed together and you take home “a fair share.” It’s faster for the processor. It means the meat you eat in March isn’t the meat you killed in November.
Stittsworth doesn’t do that. Every deer is processed individually. Your trim is your trim. Your sausage is made from your deer. Your name goes on every package.
It takes longer. It costs slightly more per deer. It’s the right way to do it, and it’s why Bemidji hunters have brought their deer to us for four generations.
What We Do With It
Cut, wrap, sausage, smoke.
Basic Processing
Cut to your spec sheet, vacuum-wrapped, labeled, frozen. Steaks, roasts, ground, stew meat.
Snack Sticks
Real beef-or-pork blend stuffed in sheep casings, smoked low. Flavors include original, jalapeño cheddar, teriyaki.
Summer Sausage
Cured, smoked, ready to slice. The Minnesota classic — cracker, cheese, summer sausage.
Brats & Ring Bologna
Real recipes in real casings. Your venison + our pork + house seasoning.
Jerky
Sliced thin against the grain. Marinated. Smoked low. Vacuum-sealed for shelf life.
Smoked Hams
For big hindquarters from elk or larger deer — cured and smoked whole.
Drop-Off Tips
Before you head our way.
- · Call first. (218) 586-2212. Especially during the first week of MN firearm season. We’ll confirm drop-off windows.
- · Bring it field-dressed. No need to skin or quarter. Just field-dressed and cooled.
- · Bring your spec sheet. Or arrive ready to walk through one with us. Steaks vs. grind, sausage allocation, snack stick volume.
- · Tag stays with the deer. MN DNR requires the tag to remain attached through processing.
- · Pickup window. Standard turnaround is 7–14 days. We’ll tell you straight when we expect it back, not a date we can’t hit.
