Philly Cheesesteak Brats take the classic sandwich — thinly sliced beef, onions, peppers, and melted cheese — and turn it into a brat that doesn’t require a fork. We mix shaved beef, grilled onions, and our house cheesesteak seasoning into the pork, then stuff it in natural casings. It tastes like a brat that went to South Philly and came back changed.
How To Cook It
Grill or pan sear to 160°F internal. Caramelized onions on the side are mandatory.
Typical timing: 12–16 minutes on a medium grill
- 01Grill over medium heat. These have a lot going on inside, so you don’t want screaming high heat that burns the outside before the middle is safe.
- 02Turn frequently so the onions and peppers that are mixed in don’t scorch.
- 03Pull at 160°F. The cheese component will be fully melted.
- 04While they rest, throw some sliced onions on the grill for 4–5 minutes — they become the perfect topping.
- 05Serve on a bun with the grilled onions and a little extra cheese if you’re feeling honest about it.
Best for: Game day, anyone who loves a real cheesesteak but wants it in a form you can eat with one hand, people who think regular brats are too boring.
What’s In It
Short list. Real ingredients.
Ingredients
- · Whole-muscle pork
- · Shaved beef (cooked and mixed in)
- · Grilled onions and peppers
- · Provolone-style cheese
- · House cheesesteak seasoning
- · Natural casings
Sourcing: Beef and pork from the same regional suppliers. The onions and peppers are real produce we process in small batches — not dehydrated vegetable flakes.
High protein from two meats. The vegetables are actual vegetables, not flavor powder.
Why Butcher Shop Matters
The big processors make “Philly” brats with beef flavoring, onion powder, and cheese powder. You get a brat that tastes vaguely like a sandwich if you close your eyes. Ours has actual pieces of beef and visible onion in the cross-section. It’s a completely different experience — and one that only makes sense when a real butcher shop decides to do something ridiculous in the best way.
FAQ
Quick answers.
Is there actually beef inside these brats?
Yes. We cook and chop real beef and mix it into the pork grind. It’s not “beef flavor” — it’s meat. You’ll see it when you cut one open.
Do they taste like a real Philly cheesesteak?
They taste like a brat that was raised by a Philly cheesesteak. The seasoning and the mix of beef + onions + cheese are authentic. The texture is still a proper snap brat.
Are the onions raw or cooked when they go in?
We grill the onions first. Raw onion in a brat doesn’t cook enough during the short brat cooking time. Pre-cooked onions give you that sweet, jammy flavor you want.
