The Fine Print
18 lb minimum per flavor on all sausage and smoked products — that is what keeps the seasoning ratio right.
Smoked products come vacuum-packed at no charge. Choosing bulk bagging instead saves $0.50/lb.
Fresh cuts are wrapped in butcher paper. Vacuum-seal upgrade is $1.00/lb.
Pick up within 30 days of notification. After that a $6 per month freezer charge applies.
We Never Batch
Most processors run several hunters’ animals together during deer season and everyone takes home a share of the pile. We don’t. Every deer is processed individually from intake through pickup — your trim becomes your sausage, your name goes on every package. Smoked in Turtle River. Wild game processing is for the hunter’s own use and is not for sale. Hunting outside Minnesota? Bring boned-out or cut-and-wrapped meat, or quarters with no spine or head attached. Whole carcasses from other states and provinces can't come into Minnesota.
Sausage & Smoked
- Bulk sausage
- Brats — pre-cooked, smoked or fresh

- Jerky
- Dried
- Link sausage
- Custom flavored brats
- Wild rice & cheddar brats
- Wild rice & cheddar summer sausage
- Old fashioned wieners

Seasoning is blended to a ratio. Below about 18 lbs of trim the batch is too small to season accurately. Two flavors means 36 lbs of trim — plan on a big deer, or two.

How Much Meat Comes Back
Moose & elk: boneless, $1.00/lb cut & wrapped
At an 18 lb minimum per flavor, an average deer supports about one smoked flavor plus a freezer of cut-and-wrapped meat.
