Traditional jerky is dehydrated to a moisture activity of 0.70 or below, which extends shelf life dramatically but creates that characteristic tough, dry texture. The dehydration also concentrates the sodium, making mass-market jerky notoriously salty.
Our beef strips are semi-dried — we stop well before the product becomes tough, which is exactly why they're a refrigerated product. Kept refrigerated, they hold a 180-day shelf life. Why Shelf Life Still Works Without the Dryness
This is the question we get most often: if the product is soft and fresh-style, how does it keep for 180 days?
The answer is the combination of water activity management, vacuum sealing, refrigeration, and our USDA-inspected process.
