Best Beef Jerky in Minnesota: What Real Jerky Looks Like

Beef jerky has been a North American trail food for centuries — but not all jerky is created equal. If you've only had the kind that comes in a plastic bag at a gas station, you're missing what real beef jerky is supposed to taste and feel like.

Minnesota has a long tradition of quality jerky making, particularly in rural communities where hunting, fishing, and preserving meat are deeply woven into local culture. At Stittsworth Meats, we've been perfecting our jerky recipes at our Turtle River Smokehouse for years — and the result is something that stands apart from anything you'll find on a convenience store shelf.

What Separates Great Beef Jerky from the Rest

Most commercial jerky has three problems:

  • Too much tenderness or too much chew — Mass-produced jerky is often either mushy from over-processing or jaw-breaking from being too lean and too dry
  • Artificial smoke flavor — Real smoke takes time and equipment. Liquid smoke is cheap and fast. Most brands use it.
  • Excessive sodium and preservatives — When you're making millions of bags, you need every chemical advantage available to extend shelf life

Real jerky — the kind Stittsworth makes — starts with quality beef, uses actual hardwood smoke, and relies on proper drying technique rather than chemicals to extend shelf life. The result is a product with a clean bite, visible marbling in the meat, and smoke you can actually taste.

Stittsworth Jerky Flavors

Original Smoked Beef Jerky

Our baseline — and it's anything but plain. The original recipe uses a spice blend developed over years of iteration, balanced to complement the natural beef flavor rather than bury it. This is what jerky should taste like: meat first, smoke second, seasoning third.

Peppered Beef Jerky

Black pepper is the most natural pairing for beef in existence. Our peppered version uses coarser ground pepper that you can see on the surface — bold, direct, and excellent with a cold beer.

Teriyaki Beef Jerky

Sweet, savory, and slightly sticky — our teriyaki jerky has a glaze that caramelizes slightly on the edges during drying. This is the flavor that converts people who don't think they like jerky.

Hot & Spicy Jerky

This one has real heat. Not gimmick-level hot, not painfully hot — just a sustained warmth that builds as you eat it. The heat doesn't come from a single source; it's a blend of chili and cayenne that works with the smoke rather than fighting it.

What Makes Minnesota Beef Jerky Different?

Northern Minnesota has a specific jerky culture that traces back to its hunting and outdoor traditions. When the deer season opens every November, thousands of Minnesota families process their own venison — and the standards for what makes good dried, preserved meat are correspondingly high.

Stittsworth Meats grew up in that culture. Based in Turtle River — 30 miles north of Bemidji, in the heart of the Northwoods — we're surrounded by the hunting camps, fishing resorts, and farms whose customers have eaten our products for decades. That community holds us to a standard that national brands simply can't match because they don't have to.

Our jerky is also USDA inspected, produced in a certified facility, and subject to the same food safety protocols as everything else we make. You're getting genuine quality control, not just a good story.

How to Store and Eat Beef Jerky

We make jerky two ways, and they store differently — the storage instructions printed on your package are always the final word:

  • Shelf-stable jerky: Unopened, good for a full 365 days at room temperature, away from direct sunlight
  • Fresh Jerky (our refrigerated beef strips): Keep refrigerated — 180 days unopened. The softer, fresher texture comes from higher moisture, and the fridge is what protects it
  • Opened: Either style is best consumed within 1-2 weeks, kept refrigerated
  • Freezer: Beef jerky freezes well — good for bulk orders. Thaw at room temperature for 30 minutes before eating

Ideal serving temperature is room temperature. Cold jerky can be chewy in a way that masks the flavor; letting it come to room temp restores the texture and lets the spice notes open up.

Best Uses for Quality Beef Jerky

Beyond the obvious "eat it directly from the bag" use case:

  • Hiking & camping food — High protein, calorie-dense, and our shelf-stable jerky needs no refrigeration
  • Charcuterie and snack boards — Sliced thin, paired with sharp cheddar and crackers
  • Gift boxes and bundles — Our jerky appears in several Stittsworth gift bundles that ship nationwide
  • Road trip snacking — This is honestly what it was designed for
  • Game day — Better than chips, higher protein, and a conversation starter
