How to Grill the Perfect New York Strip

Here at Stittsworth Meats we take meat seriously and only like seriously good meat.  This post will be specifically about achieving a perfectly grilled new york strip but can also be used in various other cuts.  Lets dive right in!  We at Stittsworth Meats prefer to use smoker/grills when preparing meat and the New York Strip is no different.  Always start by checking your hopper to make sure its full of pellets and of course start the smoker on the "smoke" setting to get it ready to rock.  Once you have a good amount of smoke rolling out grab those NYS (seasoned to your liking) and place them on the smoker.  You will want to keep the setting on "smoke" for 45 minutes to an hour.  After that remove the NYS from the grill and crank the heat up to 350 degrees.  When the smoker has achieved the appropriate temperature put the NYS back on the grill and cook them until they reach an internal temperature of 135 degrees.  Pop them off the grill, let them rest for 5-10 minutes and serve!
